Crystal Jade

Group Executive Chef Foo of Crystal Jade chain of restaurants introduces a new yusheng creation to their menu, made with the combination of fresh and unique ingredients. The Prosperity Golden Lobster Yusheng ($98 for small; $168 for large) is assembled with a colorful selection including marinated plum tomatoes, pickled cucumber, pomelo, iceplants, lily bulbs, kaffir lime leaves, red dates, and walnuts. The salad is topped off with local lobster meat and ikura, where it’s all held together with a light olive oil-based dressing, mixed with flower blossom syrup, plum sauce and sesame seeds.

Yan Ting

The secret in Yan Ting’s yusheng deviates a little from the rest, where the sauces involved in the Prosperity Yu Sheng (with salmon or abalone of choice; from $78) includes the chef’s signature blend. It comprises fermented beancurd sauce, mayonnaise and garlic, while the sweet addition of sweet sauce made of plum, passion fruit, orange and apple adds balance to the taste. A vegetarian option is available, with sea coconut as the main topping ($68 for medium; $78 for large).

Wan Hao Chinese Restaurant

One is spoilt for choice when it comes to yusheng selections at Wan Hao Chinese Restaurant at Marriott Tang Plaza Hotel. The classic version is elevated with toppings of Lobster, Scallop, Salmon, Alaskan Crab, Caviar, Crispy Fish Skin with Passion Fruit Pearls, and a choice of dressing ranging from white peach, kumquat or traditional sauce ($268). The Mini Abalone and Crispy Fish Skin combo comes in two sizes, large ($158) and small ($68), while those who’d like a little more red meat in their platter can opt for the Smoked Duck Breast which is also topped with crispy fish skin in large ($158) and small ($68).

The Carvery

Switching out salmon in their Golden Eight Treasure Yusheng ($68++), The Carvery at Park Hotel Alexandra opts for cured trout and baby abalone to signify the abundance of wealth. The usual assembly of shredded vegetables, fruits and candied walnuts get an added flavor of sweet and sour with a white balsamic and peach dressing.

Monti

Monti’s yusheng presentation is a colorful array of the usual suspects, but not without the additions of salmon roe, carabinero prawns, and smoked salmon done carpaccio-style. The fruits – pomelo, mango, orange, sake, yuzu and mangosteen – are fashioned into molecular spheres, presenting a medley of colorful caviar on the platter.

Candlenut

In true Peranakan fashion, Candlenut adds Southeast Asian zest to its Yu Sheng “Lo Hei” Platter ($68++). Green mango slices are added to the assembly of candied fruits and vegetables, while arrowhead chips are thrown in for an added crunch. The homemade plum dressing is a little sweeter than most with the addition of gula melaka and ginger flower in its mix.

It’s more the merrier with two of 藝 yì by Jereme Leung’s yusheng platters, serving up to 10 people each. Take your pick between the Fortune Yu Sheng ($168++) that comes with smoked salmon or the Prosperity Yu Sheng ($198++), a premium version with raw lobster meat. Both come with a specialty Yunnan rose dressing for a sweet pick-me-up.

Crowne Plaza Changi Airport

Hawaiian poké bowls serve as inspiration for Executive Chef Alvin Leong’s Celestial Crowne Yusheng ($108+) where the base is created from a mix of fresh and pickled produce including turnip, beetroot, papaya and pineapple. The texture is countered by chia seeds, seaweed, almonds and charcoal dough chips, before being topped off with Norwegian salmon and salmon roe, and drizzled in citrus mango plum sauce.

Blue Jasmine

Blue Jasmine is among the few that offers lobster in their yusheng platters this year. While smoked salmon options are available, the Fortune Yu Sheng with Lobster and Norwegian Smoked Salmon ($108 for small; $188 for large) introduces both. For those who seek to toss something a little lighter (in weight and not in fortune), a platter with the sole option of crispy fish skin is available ($58 for small; $88 for large).
