Located in a cosy corner of Shangri-La Singapore's Garden Wing, Waterfall Ristorante Italiano has long felt like a quiet escape away from busy Singapore. With its newly refreshed menu, the restaurant deepens that sense of familiarity and warmth, offering diners a renewed invitation to linger over food that is heartfelt, generous, and rooted in tradition.
Helmed by Chef de Cuisine Simone Loisi, whose culinary roots trace back to Puglia in Southern Italy, the revamped menu introduces over 20 new à la carte dishes while staying true to the comforting spirit that regulars have come to love. The focus is on honest Italian flavours, elevated through thoughtful techniques and carefully sourced ingredients.
A notable highlight of the menu is its emphasis on sharing. Under the banner of Come A Casa, dishes are designed to be enjoyed together, echoing the conviviality of Italian family meals. The Pizza in Pala is a natural centrepiece. Served long and rectangular, it allows diners to choose three flavours on one crisp, airy base, making it ideal for group dining.
For a more indulgent communal experience, the Fiorentina alla Griglia presents a 1kg Angus T-bone steak, grilled and carved tableside, capturing the celebratory essence of a Tuscan feast.

Handcrafted pastas remain at the heart of the experience. From the luxurious Spaghetti alla Chitarra with whole Boston lobster to the rustic Orecchiette al Ragù di Braciole, each dish reflects regional Italian cooking and the care taken in daily in-house preparation. Mains like the grilled Angus ribeye or the tender Polpo alla Griglia with roasted pumpkin continue the theme of bold flavours paired with elegant restraint.
Desserts provide a gentle, satisfying close. Whether it’s the silky panna cotta topped with mango coulis or the indulgent pistachio cheesecake, each sweet offering rounds off the meal with comfort and finesse.
