The celebratory meal starts with The Black Pearl’s Trio Appetiser Platter of Baby Abalone Siew Mai, Black Truffle Crystal Dumpling, and Aged Black Vinegar Jellyfish Head with Black & White Fungus.
A symbolic nod to abundance and good fortune comes in the form of the collagen-rich Shark’s Fin in Superior Broth, followed by Crispy Scale New Zealand Cod Fish with Pineapple & Spices Signature Sauce, and the signature Crispy Roasted Chicken with Dried Chillies.
Bringing a refreshing interlude to the menu is the Stir-fried Asparagus with Black Truffle Sauce, followed by the rich 10 Head South African Abalone Braised Rice, crowned with tender, slow-braised abalone to symbolise wealth and prosperity. Finish off with the chilled Pink Guava Soup with Pickled Mango, Sago, & Coconut Jelly.

The menu features a handpicked selection of the finest Wagyu, showcasing the Miyazawa A5 Wagyu, a prized beef from Chiba Prefecture renowned for its exceptional marbling, rich flavour, and melt-in-the-mouth texture.
Menu highlights include the Sous Vide Miyazawa A5 Rib Cap seasoned with sea salt, topped with Kaluga caviar, Hokkaido sea urchin, and served with homemade ponzu sauce.

Dialling up the indulgence, the patty is lavishly crowned with seared foie gras and generously draped in a velvety bordelaise sauce enriched with red wine jus. Begin on a trio of starters of Seasonal Oysters with finger lime, yuzu EVOO, and Yarra Valley roe; Burrata with grilled pumpkin, pumpkin seed granola, and Kalamata-tomato salsa with stout balsamic; and a Poached Prawn Salad with avocado, pico de gallo and smoky cocktail sauce.
The menu highlight is the 30-Day Spent Grain & Koji Dry Aged Black Angus Ribeye, served family-style. The 200 day grain fed, MBS3+ Riverina NSW Australia beef (sourced in collaboration with Butcher Box), is accompanied by truffle mashed potatoes, crisp onion rings, a local leaf salad, and IPA honey-roasted garlic with housemade condiments and sauces.
