Festive Feasting Continues at Yàn This CNY

Celebrate the Lunar New Year, whether at Yàn or at home, with these gourmet favorites

Festivities are far from over with Chinese New Year coming up. However, celebrations of late may be a little bit different from what we're used to: Carefully gathering in smaller, more intimate numbers within our homes or at our favorite dining spots.

Yàn, the resident Cantonese restaurant at the National Gallery, continues to make annual celebrations possible with an assortment of classic dishes across six set menus which are available for dining in, and other selections for takeaway.

Their renowned yu sheng makes an appearance again this year, prepared in signature ‘Shun De’ style, which is a type of cuisine derived from a small town in the Pearl River Delta in China’s Guangdong province. Here, dishes are centered on fresh seafood and laced with strong umami flavors, akin to Cantonese cooking.

Layered with colors and complementing flavors, the Abalone & Yellowtail with Gold Foil Lo Hei in ‘Shun De’ Style is assembled with a mountain of crispy vermicelli and made colorful with shredded purple and yellow sweet potatoes, leafy kailan, and pickled ginger. The artistic dish is further ladened with sesame seeds and gold flakes, before slices of braised abalone and yellowtail fish are tossed into the mix.

Perhaps a dish that can double up as your dining centerpiece at home is Yàn’s Harvest Pen Cai, a claypot brimming with prized ingredients. A selection of eighteen ingredients including abalone, whole conpoy, fish maw, sea cucumber, and scallops are layered with roast duck, soya chicken, sea moss, and gingko. Each ingredient is prepared individually before completing them in a braise and finished with duck gravy.
