Available through December, the 3- and 4-course Saint Pierre x Maison Collery Champagne set lunch menu ($308++ and $378++ per person respectively) features a different Grand Cru Maison Collery Champagne pairing for each course. Start off with the trio of Champagne Snacks of Jerusalem artichoke vichyssoise atop a Jerusalem artichoke and black truffle tartelette; Shiro ebi on tomato jelly; and braised Shimeji mushroom on a dill tartelette. The snacks are paired with Champagne Collery Blanc de Blancs Grand Cru NV, as is Chef Emmanuel Stroobant’s first course, aptly titled Oscietra Caviar, featuring house-smoked Ora King salmon topped with La Maison Nordique Oscietra Imperial Caviar on oba-dashi jelly.

Brittany Blue Lobster with roasted purple artichoke and spiced saffron oil-perfumed shellfish consommé is paired with the elegant Maison Collery Brut Grand Cru NV, for its citrus notes and long, fresh finish. Maison Collery Blanc de Noirs Grand Cru NV complements the roasted AOC Bresse chicken stuffed with black winter truffle-herb chicken mousseline, while the dessert of Japanese Tochiotome strawberries and candied Korean chestnuts in rum-infused chestnut cream on vanilla sablé is served with the Maison Collery Rosé Brut Grand Cru NV.

Estate Dinner Buffet Experience

Don’t miss the month-long Estate Festive Lunch and Dinner Buffet (from $82++ per adult) and the Festive Seafood and Wines Dinner Buffet (from $158++ per adult). Meanwhile, the Festive Grand Sunday Champagne Brunch on Christmas Eve and Christmas Day features yuletide specials including Porchetta with Gremolata and Pine Nut Stuffing, whole Wagyu Prime Rib, Classic Beef Wellington and whole Roasted Turkey, as well as Asian delights including Mud Crab with Sarawak White Pepper and traditional Shanghai-Style Smoked Fish with Furikake.

Over at Cal-Italian Osteria Mozza, the Italian Christmas four-course sharing menu for two (from $148 per adult) features signature antipasti of cured meats, grilled vegetables, cheeses and fettunta; primi including Rigatoni alla vodka and Corzetti alla Genovese with burrata and pistachio; and mains of Crispy Pork Belly with spiced plum sauce, and creamy Tuscan Olive Chicken. For a sweet finish, Panettone Bread and Butter Pudding await, as well as classic Cannoli with candied orange and chocolate. Sea Bream in "Laksa" curried coconut broth

Head to Spago by Wolfgang Puck for an elegant four-course Christmas Eve dinner menu ($185++ per person). Start the evening with an appetiser of Hamachi & Hokkaido Scallop Ceviche, featuring fresh hamachi and Hokkaido scallop sashimi in a yuzu-perfumed soy sauce. For mains, choose from eight delicious options, such as the Lobster Pot Pie filled with a shellfish velouté, winter vegetables and French black truffles, as well as the Pan-Seared Sea Bream in “Laksa” curried coconut broth. Round up the feast with the fluffy Salted Caramel Soufflé with Farmer’s Market Fuji Apple Sorbet, or the decadently delicate Raspberry Chocolate Mille Feuille with Raspberry Lychee Sorbet.

At Capella Singapore, festivities go on even when Christmas is over because on New Year's Eve and New Year's Day, the luxury hotel's F&B outlets will have something for everyone. Fiamma will be holding a New Year’s Eve Dinner on 31 December 2023, which features a variety of celebratory dishes including the Australian Wagyu beef fillet with Taggiasca olive sauce, the clam, mussel, squid, and Mazzara del Vallo red prawns in seafood sauce, as well as wild-caught seabass with fennel and citrus sauce. First seating at the New Year’s Eve Dinner is from 5:30-8pm ($256++/person, inclusive of a glass of champagne), which features a four-course menu. Second seating is from 8:30pm-1am ($326++/person, inclusive of a glass of champagne), which features a more indulgent seven-course menu. The second seating will also allow you to be part of the festivities, where a deejay will spin live beats from 9pm through 1am, letting you welcome 2024 in high spirits.

At Cassia, a six-course dinner menu ($238++ per person) will be available on both New Year's Eve and New Year's Day, featuring dishes like braised dried seafood soup in a pumpkin bowl, baked four-head king prawn, and wok-fried Australian wagyu beef. Wine pairing will also be available at an additional $118++ per person. Meanwhile, Bob's Bar will be open from 12pm to 1am on 31 December, where you can greet the New Year while sipping on festive-themed cocktails like The Polar Express and The Grinch, which include seasonal ingredients like Woodford Reserve bourbon, nutmeg, and basil honey syrup.
