The Coach Restaurant – Sunday Prime Rib
A nod to the classic tableside service of New York City’s great steakhouses, the Sunday Prime Rib experience ($68++ per person) sees prime rib carved and presented from a rolling trolley, evoking the old-school charm of mid-century American fine dining.
Sourced in partnership with local meat purveyor Butcher Box Singapore, the prime rib is dry-aged in-house for 20 to 25 days. During the aging process, excess fat trimmed from the corn-fed beef is rendered and infused with smoked corn husks and Woodford Reserve Kentucky Straight Bourbon Whiskey, before being brushed back over the prime rib.
Served with a choice of two sides, options include creamed spinach, smoked butter mashed potatoes, grilled kale and arugula salad, roasted root vegetables, or a baked russet potato cooked in beef fat and topped with Gruyère and cheddar. The latter comes with silver service-style tableside customisation, a nod to its New York roots. Add a 10g caviar supplement for $38++.

Big Wine Freaks – Omakase Thursdays
Big Wine Freaks’ Omakase Thursdays is an evolving weekly concept centred around wine discovery and ingredient-led dining. Held every Thursday, the eight-seat-only Omakase ($188++ per person) offers an intimate and guided take on the traditional omakase experience, reinterpreted through a wine-first lens.
Each session features a curated menu alongside rotating wine tastings spotlighting different producers, regions, vintages, or themes from the cellar. In the kitchen, Head Chef Lim Wei Kiat and his team create constantly evolving dishes, giving returning guests a different experience each time.
The experience is designed around enjoying exceptional wines and ingredient-driven dishes in the same setting, offering a more relaxed and exploratory approach to dining.
