Asia’s first traditional Parisian bouillon has opened at Mandarin Gallery, bringing the spirit of 19th-century French dining to Singapore. Founded by father-and-son restaurateurs Frédéric and Jean Colin of Brasserie Gavroche, the 70-seater restaurant channels the charm of old Paris with a vintage wooden bar sourced from France, red banquettes, and classic posters.
Known for hearty fare at affordable prices, the menu features all-day French classics, with every dish priced below $28++. Highlights include Oeufs Mimosa, Saucisse Purée, Parmentier de Canard, and Bœuf Bourguignon with elbow pasta. Desserts range from Mousse au Chocolat to a giant Profiterole served with vanilla soft serve and hot chocolate sauce.

At New Bahru, Chef-Partner Mirko Febbrile introduces Solterra, the first of three seasonal menus inspired by the landscapes and agricultural traditions of Puglia in southern Italy. Derived from Sol (sun) and Terra (earth), the menu explores regional flavours through themes such as Ancient Grains, Roots, Two Seas and Embers.
The experience is available as a six- or eight-course dinner menu, alongside four- and six-course Saturday lunch options. A refreshed non-alcoholic pairing, Botanica, uses botanicals, fermentation, and house-made infusions, while an optional cheese course spotlights Italian cheeses aged in-house using preserved kitchen ingredients.

Inspired by Spain’s tapas culture, new restaurant Sabòr brings bold Spanish flavours to CHIJMES with a lively courtyard setting built around communal dining. Led by Valencian-born chef Javier Vicente Rejas, co-founder of the London Paella School, the menu focuses on rustic tapas and hearty mains designed for sharing.
Highlights include Croquetas Spicy Crab, Bikini Sobrasada with Honey and Cheese, Angus Beef Steak with Piquillo Peppers, and Binchotan-grilled Barramundi with Moho Picón. Paellas range from classic versions to richer Wagyu beef variations.

Until 31 May, Pete’s Place celebrates Europe’s white asparagus season with its limited-time Asparagi Bianchi Di Stagione menu. Drawing from northern Italian flavours, the menu includes roasted veal loin with asparagus salad and Brusca sauce, a white asparagus risotto with Robiola cheese and walnuts, and seared red snapper paired with both white and green asparagus.
A curated wine selection from Veneto and Franciacorta complements the dishes, balancing the delicate bitterness of white asparagus with crisp acidity and finesse.
