LE PRISTINE SINGAPORE

Le Pristine Singapore by Michelin-starred Chef Sergio Herman at Grand Hyatt Singapore offers an elegant and peacefully cocooned three-course lunch affair ($85++) in the heart of Orchard Road.

Featuring Chef Herman’s very own New Italian cuisine, the menu pays a contemporary tribute to the purity of Italian flavours, his deep-rooted Zeeland heritage from the southwestern coast of the Netherlands, and the freshest produce, as Zeeland is renowned for its pristine waters and exceptional seafood. The menu offers a showcase of signature dishes embodying the essence of New Italian cuisine, seamlessly woven with local inflections inspired by Singapore’s vibrant culinary landscape.

Menu choices keep rotating, but signature creations such as the Pizzette, Collapsed Tiramisu, and Le Pristine Signature Seafood Orecchiette remain infinitely available (add $20++ supplement for the latter). Other must-try choices include the Irish Mór Oyster with Chinese Mule cocktail, Rice Stew with Japanese rockfish and mussels, as well as the Pot-au-Feu with Roscoff onion, artichoke, and green beans.

MAISON BOULUD

A new Express Set Lunch menu ($56 for two-course or $65 for three-course) awaits at Maison Boulud, a showcase of Chef Daniel Boulud’s creative interpretations of classic French dishes, paired with the freshest seasonal ingredients, and a touch of inspiration fueled by his travels around the world (Sands Member Exclusive $56 for three-courses).

For starters, choose from the earthy Wild Mushroom Soup, Marinated Hamachi with mango & avocado chutney, or the classic Pâté en Croûte with duck, venison, pork, and girolle mushrooms. Mains offer a choice between Roasted Organic Medley Vegetable, Confit Chilean Sea Bass with Ratatouille Provençale, and Seaweed Beurre Blanc Sauce, as well as Braised Angus Beef with Roasted Baby Potato. For dessert, choose between the Duo of Artisanal Cheeses, assorted ice cream and sorbets, or the luscious Chocolate Banana Cake with Guanaja ice cream, coffee foam, and roasted pecan.

The restaurant also offers two Plat Du Jour options, with the Dover Sole Fillet served with braised fennel and baby potato in a black garlic and squid ink sauce ($38) and the French Roasted Pigeon with potato galette and braised salsify ($58).

ENSO STEAKHOUSE

Nestled within the prestigious Centre Of The Universe (C.O.T.U), Singapore’s premier multi-concept dining and entertainment venue in the CBD district atop CapitaGreen, the 72-seater modern Japanese-inspired Enso Steakhouse has recently launched its first set lunch menu.

Helmed by Executive Chef Alex Craciun, diners can choose between the two-course ($58++) or three-course ($68++), inclusive of one side dish per person, complemented by a specially curated (optional) wine list and sake program.

Appetiser options include the popular Wagyu Beef Koshihikari Rice with slow-cooked truffle egg, Asian Pear & Avocado Salad, and Tuna Tartare & Caviar with tempura nori (+$32).

For mains, choose between Coal-Roasted Chicken, Grilled Salmon Salad, grass fed Altair Wagyu Bavette, and Grilled Maitake Mushroom with slow-cooked egg and garlic aioli. Larger cuts of meat are available for the more carnivorous, such as the A4 Japanese Wagyu Ribeye (+$84).

End on a sweet note with either the Fuji Apple Crumble Baked Cheesecake with Madagascan vanilla ice cream or Chocolate & Salted Caramel Cake with whiskey chocolate ice cream and black olive tuile.

Cygnet, the neo-classic Manhattan-style bar and grill by Sean Connolly, Yorkshire-born creative director of F&B at the chic QT Singapore on Robinson Road, offers a unique CBD set lunch menu featuring 14 New York-inspired dishes. Cygnet references the hotel’s (and indeed Manhattan’s) classy art deco architectural heritage and the restaurant’s concept of a swan motif for its art deco design.

The two-course ($58++) or three-course ($68++) lunch sets bring on the Manhattan steakhouse vibes with classics such as Prawn Cocktail, Charcoal-baked Squid with Pistachio pesto, Cygnet New York Burger with shoestring fries, Ricotta Gnocchi with an assortment of mushrooms, and Strawberries Romanoff, to name a few. For an extra touch of indulgence, add on the Seafood Platter ($15++), as well as classic Steak Frites ($12++).

Weekday lunch at one Michelin-starred Araya by Chef Francisco Araya and Chef Fernanda Guerrero is a refined, efficient affair at Singapore’s first and only restaurant offering Chilean-Japanese flavours.

Perfect for a quick power lunch, the three-course Menu Rápido ($80++) begins with Chef Fernanda’s sourdough twist on Chile’s famous potato-based Chapalele bread, complemented by cochayuyo (dehydrated Chilean Southern bull kelp) spread and spiced Uruguayan merken butter. Mains (each served with Chorizo Arroz) include Cordero, for lamb with cochayuyo marmalade and salsa verde, as well as add-on premium creations such as Picaña Asada (+$12) featuring char-grilled wagyu with aged Ecuadorian cacao sauce, or Pacific Madara with salsa de choritos (+$22).

For a more wholesome experience of the Chilean heritage journey, the five-course Taste of Araya ($168++) menu features some of Araya’s signature dishes such as Ceviche, with Hokkaido scallops and leche de tigre sorbet; Picaña with chimichurri (a typical Chilean Sunday family lunch tradition); and Antarctica, a sweet ode to the icy continent, crafted with Patagonia berries, goat’s milk ice cream, and dulce de leche.

The hearty (and value for money) three-course Heritage Set Lunch ($35++) is inclusive of House Achar, Nonya Chap Chye, and Blue Pea Jasmine Rice. Mapo Tofu, Mushroom Dumplings, or White Rojak make up the appetiser selections; while main choices include Catch of the Day, Chef’s Special of the Day, Nangka Gulai (young jackfruit curry with spices and coconut milk), as well as the signature Beef Cheek Rendang (+$15).

Add on Dessert of the day (+$5) or Yuzu Cheng Teng (+$8) — a longan and white fungus sweet soup served with yuzu sorbet.

The quick but satisfying Express Lunch ($38++) at Gunther’s by Chef Gunther Hubrechsen offers one freshly baked baguette and a choice of mains including Roasted Sea Bream with pilaf rice, Roasted Spring chicken with confit of peach and homemade potato croquette, or Warm Angel hair pasta with sakura ebi. The set is inclusive of coffee or tea, and complemented by freshly-baked financiers.

For a more leisurely lunch affair, choose between the three-course ($58++) or four-course ($80++) Chef’s Seasonal Lunch. In addition to the above-mentioned main course choices, appetisers include Chilled tomato velouté with burrata, Grilled French Foie Gras, and Roasted Pacific brown tiger prawn, Parisienne style.

For extra indulgence, add on Chef Gunther’s signatures of Cold Angel hair pasta with Oscietra caviar ($25++), Grilled Wagyu Beef Sirloin with roasted sweet corn ($15++), and the Fine apple tart “aux dragées” with Havana rum raisin ice-cream ($8++).

A new lunch chapter unfolds within the same shophouse space that has been home to one Michelin-starred Ma Cuisine at Duxton Hill, a long-time trailblazer in Singapore’s gastro wine bar scene.

And now comes the recently launched Bonjour Ma Cuisine, for a refined yet casual take on classic French bistro dishes for lunch. Highlights for a slice of Parisian Bistro charm include the classic Croque Monsieur Truffe ($25.50++) and Croque Madame Truffe ($28.80++). Other popular favourites include the Quenelle de Brochet Sauce Nantua ($20.80++) featuring delicate fish quenelles in a rich crustacean sauce from the region of Nantu, and the hearty Jambon Persillé ($13.50++), a Burgundian ham hock terrine favourite from Ma Cuisine’s original menu.

For dessert, don’t miss French toast with Pain Perdu Kaya or Crème Anglaise ($14.50++) for a local take on French Toast, and the classic and timeless Île Flottante ($ 10.80++) for airy, poached meringues in silky vanilla custard.
