Enjoy an eternal Italian summer at Publico Ristorante & Garden, which features refreshed interiors, as well as a menu with new signature dishes that pay homage to classic Italian regional recipes.

The restaurant, located at InterContinental Singapore Robertson Quay, has one of the best carbonara pastas in town, using house-made chittara pasta that’s tossed in a silky sauce made the traditional way with egg yolks, pecorino cheese, lots of black pepper, and guanciale. Other must-orders include the Publico Woodfired Mediterranean Octopus, Ortolana Pizza loaded with seasonal vegetables, and the 1.2kg Bistecca all Fiorentina.

A New Season at Revolver

From now until 30 September, Revolver puts forth the Bullet 10 summer menu comprised of impeccable produce transformed through the restaurant’s culinary prowess, particularly when it comes to grilling and spices.

Showstopping highlights include grilled Japanese turnips accented by artichokes and coriander seeds and Rock Lobster marinated in a Goan Recheado Masala. Signature dishes are given a slight update, so look forward to new iterations of old favorites, such as the Grilled Paneer on a tomato relish with onion chutney and the signature Kulchette stuffed with smoked Scamorza cheese and tandoor-roasted pulled quail.

Grilled to Perfection at Griglia

Since opening two year ago, Griglia has been high on our list as a true hidden gem. It’s an unassuming place that does Italian fare well, thanks to Executive Chef Andrea de Paola’s knowhow and his kitchen team’s expert handling of the grill.

Today, Griglia tempts diners with new menu additions, which include small bites like the Smoked Eel on a grilled buttery brioche, topped with trout roe and horseradish. Pastas here are grilled too, lending a subtle smoky flavor, so make sure to try the Charcoal Grilled Fusilli with octopus and Nduja, and the Homemade Pappardelle in a Chianti-infused red sauce with crispy guanciale. For hearty mains, the Suckling Pig Porchetta with its crispy skin and the Whole Mediterranean Seabass are sure to satisfy.

Summer Swansong at La Dame de Pic

La Dame de Pic, Raffles Singapore welcomes new Chef de Cuisine Alexandre Alves Pereira, so expect to taste a vibrant summer menu that he worked together with Chef Anne-Sophie Pic.

Highlights include the house specialty, Les Berlingots, but this time, stuffed with a symphony of French and Japanese mushrooms in an earthy mushroom consommé with ginger and Indonsian vanilla beans. Expect to be wowed by other dishes, such as the Ebi Chawanmushi rich in umami flavors thanks to a dried shrimp-infused stock, a delicate Tomato and Tuna Tart, as well as a tender Pork Rack that’s marinated in hojicha and white miso, and served with confited and fermented carrots.

Located within SuperNature at Dempsey Hill, a retail destination that stocks a comprehensive range of certified organic and natural products, is casual eatery Glow, which boasts wholesome fare developed in collaboration with a naturopath.

Eat the colors of the rainbow with options like the Mezze Platter with an assortment of organic vegetable crudités and dips like chickpea hummus, beetroot yoghurt, and muhammara, Pumpkin Soup, and Rainbow Slaw with cabbage, carrots, green apples, and a honey mustard dressing. More filling options come in the form of guilt-free choices like Quiche Florentine with spinach, leeks, and Comté cheese, Salmon Cake, and Beef Noodle Soup with rice noodles.
