A CNY feast at Yàn always begins with their popular yusheng, which is slightly more savory compared to other restaurants. This year, feast on the Abalone & Salmon with Gold Foil Lo Hei in ‘Shun De’ style, which is comprised of a mountain of crispy vermicelli, shredded purple and yellow sweet potatoes, pickled ginger, and gold flakes.

Fish dishes are a must too, so opt for either the Double-boiled Chicken Soup with Morel ‘Yang Du Jun’ and Fish Maw or the Steamed Soon Hock with Preserved Lemon Peel Sauce. For Chinese New Year, you’ll be spoilt for choice at Cassia at Capella Singapore, which introduces two reunion set dinner menus, as well as a dim sum lunch menu and various à la carte options. Michelin-starred Summer Palace at Regent Singapore marks the Lunar New Year with themed dishes that are a nod to the year’s zodiac. For the Year of the Tiger, Chinese Executive Chef Liu Ching Hai introduces specialties like the Fried Tiger Garoupa with Crabmeat Sauce and Broccoli and Deep-fried Sea Moss with a Tiger Prawn Stuffing and Salted Egg Yolk Roll.

But for those who want to usher the New Year with a bang, dive right into the ultra-decadent Grand Dynasty menu, which is priced at a prosperous $8,888. The lavish 9-course menu showcases the most premium ingredients and the experience – situated in Summer Palace’s intimate Pearl private room – is personally presided by Chef Liu.
