Here, diners can sample Chef Martin's most inspired creations, which include an assortment of signature dim sum dishes, including the Singapore Chilli Crab Bun. Other dishes featured in the set include the Chrysanthemum Tofu Soup, Baked Chilean Sea Bass, 'Char Siew' Spring Onion Noodles, and the Almond Cream with Egg White & Black Sesame Dumplings.
For a wider selection of flavours, the Tasting Lunch Set is perfect, which is priced at $98++ for 4 persons. Start off with traditional dim sum dishes like 'Ha Gao' Prawn Dumplings and Pan-fried Carrot Cake, followed by Sweet & Sour Chilean Sea Bass, Crispy Roasted Chicken, and Poached Hong Kong Choy Sum. Lastly, slurp up some Braised Noodles with Enoki Mushrooms and Beansprouts, and have a sweet, refreshing ending with the Roselle Flower Osmanthus Jelly.
Finally, the Signatures Lunch Set is an indulgent spread that highlights Chef Martin's most iconic creations at VLV. Starters are a little more indulgent, which include the Aburi Kagoshima Kurobuta Roll and addictive Calamari Rings. The set also includes a comforting Crab Meat and Spinach Soup, Steamed Coral Trout Head and Belly, and Claypot Prawns with Ginger, Scallion, and Dried Chilli. Chef Martin's signature Crispy Roasted Duck and Kimchi Seafood Fried Rice is also included, making it our top pick out of the three sets.
