We won’t fault you for gawking at the grand art deco-inspired interiors of ATLAS, because that’s exactly what we did when we first set foot in the recently refurbished restaurant and bar at Parkview Square. And we can tell you that you’ll be doing the same with the food too because Executive Chef Daniele Sperindio has concocted a beautiful spread of hot and cold selections, mains, and desserts that are plated like masterpieces. But more importantly, these masterpieces also taste good.

Standouts include The Burnt Edges of the Margherita, which is a bite-sized rendition of the classic pizza on a pasta cracker that’s topped with mascarpone cheese, oven roasted Perini tomatoes, olive tapenade, and fresh basil leaves. The Crispy Prawn Heads, Cod Skin, Cucumber Relish, and Sawagani Crab is where Chef Sperindio goes to town with his artistic flair, creating a beautiful jumble of the best seafood flavors and textures. As a meat lover, the Mayura Wagyu Beef Knuckle Steak was a winner. While lean, it retained a mouthwatering succulence and paired well with simple sides like roasted vegetables, French ratte potatoes, and flash fried fritggitelli peppers.

One Fullerton Gets the PS Touch

Truffle fries and larger-than-life desserts aside, people love PS.Cafe for how it makes them feel. Spending time here is always a beautiful escape, with impeccably designed spaces and signature towering floral and foliage arrangements that hide you from the world. The pioneer of Singapore’s café culture recently took to One Fullerton and boasts a menu and space that’s inspired by its waterfront location. We can almost guarantee that this will be everybody’s default spot when they’re in the area.

There is a pronounced focus on seafood here, with dishes like Chargrilled Skate with Green Harissa and Broccolini, Moules Vin Blanc, and the Chargrilled Chunky Prawn Sandwich taking center stage. The Crispy Smashed Potatoes with Barbecue Sauce is a serious contender if you have a soft spot for PS.Cafe’s shoestring fries, while the fresh and tangy flavors of the Baked Greek Spinach Pie is a good alternative to an otherwise predictable salad. Meanwhile, new additions to the popular dessert menu include the Crème Caramel Orange Cake and the ultra-decadent Mrs. J’s Trifle ****.

If a seaside getaway is not on the horizon, here’s the next best thing — park yourself (preferably on a sunny weekend) at Summerlong, located at the bustling The Quayside at Robertson Quay. Brought to you by the same people behind innovative dining destinations like Neon Pigeon, Fat Prince, and The Ottoman Room, Summerlong aims to bring to life summer seaside vacations with a whitewashed space, riverside location, and fresh and satisfying food and drinks.

Chef Justin Hammond looks to the Mediterranean for inspiration and it’s as if his creations were kissed by the sun — fun, bright, zesty, and full of flavor. Fire up your taste buds with the Greek Style Burratina with tangerine, coriander, and honey, as well as the Roasted Sweet Potato & Chili Hummus. The Black Cod with sesame and cauliflower puree and capers reinforces Summerlong’s seaside dining vibe, while the Mediterranean Smoked Pork Ribs with a pomegranate glaze and dukkah crust is a deliciously messy affair best experienced with your hands. To wash it all down, go for the Summerlong Spritz (Aperol, Cava, grapefruit, and soda), which is a nod to the classic Aperol spritz.
