There is something exciting about the newness of Sommer, the latest darling of Singapore’s fine dining scene. What it lacks in stars and awards, it makes up for with an inherent elegance and youthful vibrancy that is visible in its food and interiors. With 27-year-old Chef Lewis Barker steering the ship (who was formerly at Bacchanalia and Vianney Massot), you’re assured of inventive things coming out of the kitchen, juxtaposed with the finesse of classic French techniques. 

The intimate 28-seater restaurant boasts a tight 4- or 6-course menu that starts strong with a trio of prettily plated canapés. Of the three, pay close attention to the Mackerel on “Toast”, which takes you on a journey back to Chef Barker’s childhood, recalling a dish he had as a child, but recreated with a homemade crumpet smoked Japanese saba, and kaluga caviar. Following the small bites is the Majestic Oyster from the clear waters of the Atlantic Ocean. Its clean, subtle flavor is accompanied by brightness and zing from green apple sorbet and green chilli ponzu. 

As with most fine dining establishments that place emphasis on seasonality, expect the seafood and main dishes to periodically change. At the moment, you can look forward to the Roasted Langoustine that is paired with roasted eringi mushroom and an intense broth made with ceps, langoustine shells, and foie gras or the Line-Caught Brittany Turbot with pertuis asparagus, Bayonne ham, and wild garlic. Signalling the end of the stellar meal is the Caramelised White Chocolate with sinfully sticky Medjool dates, as well as a unique selection of petit fours.

Origin Grill & Bar has been the go-to gastronomic spot at the Shangri-La hotel for three years now, offering an array of inventive cocktails and hearty dishes. Coinciding with the hotel’s recent 50th anniversary celebrations, Origin introduces new menus that will get diners excited all over again. The journey begins at Origin Bar, where 18 new tropical cocktails are waiting to be discovered, with flavor profiles influenced by some of Singapore’s most exciting neighborhoods like Orchard, Chinatown, Little India, and the latest addition, Balestier. 

Further in at Origin Grill, produce and harvest from around the world are celebrated, starting with the Spicy Beef Tartare, a bold reinterpretation of a classic that features chipotle aioli, oignon confit, sorrel, egg yolk, and crispy rye chips for crunch. Then there is the more nuanced Hokkaido scallops seared in smoked butter and accompanied by Jerusalem artichoke cleverly presented in three ways — as chips, barigole foam, and diced. 

Origin Grill has also made a reputation for itself with its selection of top-notch meat dishes. On that front, this new menu does not disappoint. The Australian Pork Chop is a personal favorite, boasting an enjoyable meat-to-fat ratio for balanced succulence, accompanied by the piquant flavors of fermented plums and pickled mustard seeds to cut through the richness. Where beef is concerned, you won’t go wrong with the Origin Beef Platter, which is comprised of several cuts from both Origin Angus and Chef’s Cuts selections. The perfectly cooked meats are then complemented by simple yet irresistible sides, such as Beef Fat Potatoes and Braised Mushrooms.

We won’t fault you for immediately thinking that the best way to enjoy wagyu is by simply flipping it over a hot grill for a few seconds. But a visit to The Gyu Bar to enjoy its recently expanded menu is sure to open your eyes to other ways of enjoying the prized beef. 

At The Gyu Bar, every nuance of flavor and composition, texture and mouthfeel of wagyu, is complemented with a particular cooking style that will allow the meat to shine. To heighten the dining experience further, the lunch sets, a-la-carte dishes, and the yaikinuku-focused omakase menus are regularly refreshed based on the suppliers’ choice cuts of wagyu and the season’s best produce. In order to fully experience the versatility of wagyu, The Gyu Bar also recently launched an indulgent 9-course wagyu omakase that showcases seven wagyu breeds prepared in styles that displays the beef to its advantage. 

In the 9-course omakase, your first taste of wagyu is in its raw state, paired with Hokkaido uni and served in a crispy cone. This is then followed by a Roasted Wagyu Salad, which proves that wagyu can also be enjoyed chilled with fresh vegetables and a light dressing. More unique ways of enjoying the beef include the Wagyu Katsu with Homemade Curry, the Uni Wagyu Chirashi Don, and the Inaniwa Wagyu Udon.
