Peach Blossoms, PARKROYAL Collection Marina Bay Singapore

Toast to abundance, wealth and prosperity this year with an array of yusheng from Peach Blossoms. Choose from options such as the Fortune Abalone Yu Sheng, brimming with premium slices of fresh salmon paired with colourful shredded vegetables, pickled condiments, and crispy golden crackers to symbolise auspicious beginnings or go for the classic Fortune Abalone Yu Sheng, always a crowd favourite for any celebration. A vegetarian option is available too, featuring premium vegetarian abalone that replicates the rich texture of its traditional counterpart.  Yusheng platters come in portions of five or 10 to suit your gatherings. Over at Peppermint, enjoy the Urban Farm Yu Sheng, which serves six or 10. The platter combines abalone and salmon slices with freshly harvested vegetables and edible flowers straight from the hotel’s Urban Farm.

This year, Hai Tien Lo offers indulgent yu sheng platters to elevate the Lunar New Year celebrations. New on the menu is the Prosperity Yu Sheng, a luxurious combination of whole abalone, succulent lobster, and smoked salmon. Returning favourites include the Double Blessings Yu Sheng with smoked salmon and crispy silver whitebait fish, as well as the wholesome Nutritious Prosperity Vegetarian Yu Sheng, an excellent plant-based alternative for the health conscious that includes crystalline ice plant, vegetarian jerky, and garden greens. The yu sheng platters are available for dine-in and purchase via Hai Tien Lo’s eShop until 12 February 2025.

Summer Pavilion, The Ritz-Carlton, Millenia Singapore

Usher in the new year with a grand celebration at the one-Michelin-starred Summer Pavilion. Their beautifully presented yusheng features new highlights such as the indulgent prickly sea cucumber yu sheng embellished with crispy sago cracker tinted with Blue curaçao (a blue-coloured liqueur with an orange flavour). Other options include abalone, Australian lobster and salmon. When dining at the restaurant, enjoy festive dishes such as the richly flavoured steamed vermicelli paired with king scallop, caviar, crab roe and egg white. The six- to eight-course set lunch and dinner menus are available from now to 12 February 2025. Vegetarian yusheng and pen cai are available for takeaway. Chef Cheung Siu Kong’s pen cai creation features 10 layers of superior seafood and meats such as sea perch, scallops, fish maw and abalone.

Jade, Fullerton Hotel Singapore

Jade at the Fullerton Hotel presents several unique yusheng platters this year. The Deluxe Edition “Sure Win” Yu Sheng is a wordplay on the Chinese character for ‘snake’ and features finely sliced vegetables arranged to form a three-dimensional snake. Lying atop the colourful bed of greens is Norwegian smoked salmon, rose wine-marinated fresh abalone, and king prawn. The yusheng is served with rich shallot oil and tangy-sweet kumquat dressing and crowned with Jade’s signature champagne jelly gold cubes. Another impressive dish is the Gold Rush Snake Yu Sheng, a visually striking platter artfully adorned with a Chinese calligraphy greeting and a snake illustration, both hand-painted by resident Chef Leong Chee Yeng using five-spice powder.

Start the new year with bountiful blessings, with yusheng selections from 藝yì by Jereme Leung, available for both dine-in and takeaway. Each platter is artfully plated with the finest seasonal ingredients and dressed with the restaurant’s signature floral Yunnan rose dressing, specially crafted by Master Chef Jereme Leung. Choose from an assortment of three platters: the Fortune Yu Sheng with salmon sashimi & sakura shrimp; the Longevity Yu Sheng, which is served with octopus and sea whelk; and Prosperity Yu Sheng, which brings together abalone, Spanish Ibérico ham, and honey melon for a wonderful medley of textures and flavours. The yusheng selections come in medium (4 to 6 persons) and large (8 to 10 persons) options.

Bottega di Carna, Mondrian Singapore Duxton

Switch celebrations up this year at Bottega di Carna, Mondrian Singapore Duxton’s Italian eatery. The restaurant has curated a special yusheng featuring ingredients like zucchini, mandarin orange, crispy fish skin, and carrots. Diners can also choose to enhance the platter with premium seafood like scallop sashimi, lobster or caviar. The Amalfi Lemon Honey Plum sauce brings all the elements on the plate together. Alongside the festive lohei experience, guests can also savour Bottega di Carna’s newly launched ala carte menu.
